Chicken enchiladas in roasted pepper and tomato sauce

Hello #chililovers, today I'm going to tell you about a recipe that we love for a weekend afternoon or simply for a day when you feel like changing your routine.

It is a super easy, quick recipe and the result is delicious.

What are enchiladas?

Basically enchiladas are stuffed corn tortilla rolls, covered in sauce and garnishes. Some of the most popular are enchiladas in green sauce (tomatillos), red sauce (with peppers, dried chilies and tomatoes), michoacanas, among others.

In this case we made some chicken enchiladas with a Chili INC style sauce, with tomato, red pepper, chilaca , and a lot of flavor.

Below we will give you the complete recipe so that you can prepare it at home and enjoy a pleasant time.

Ingredients

  • 1 chicken breast
  • 100g Monterey Jack cheese
  • 100g mozzarella cheese
  • 2 tablespoons cream cheese
  • 3 very ripe tomatoes
  • 1 red pepper
  • 2 cloves of garlic
  • 1 small onion
  • Chilaca Chile to taste

Preparation

for the flutes

  1. Sauté chicken with chipotle , cumin, pepper and salt.
  2. Shred the chicken and mix it with Monterey Jack cheese, grated mozzarella and cream cheese.
  3. Heat the corn tortillas and roll them in the chicken mixture.

For the sauce

  1. You put red tomatoes, red peppers, garlic, onion in a pan to roast with a little olive oil.
  2. When they are burned on the sides and the aroma has changed, remove the seeds from the paprika and blend the entire mixture, finishing with salt, chilaca and a splash of olive oil.

Plating

  1. Put 2 or 3 flautas in a deep plate, cover them with the sauce (make sure everything is still hot or else put it in the oven for about 3 minutes)
  2. Add a little sour cream, feathered onion, cilantro and a little more chilaca!
