At Chili INC we take the traditional recipes of our mother and grandmother and add a differentiating touch to them. In this case we took the recipe for pumpkin or pumpkin cream and adding apples and Yellow Chili Pepper we obtained a delight that you will not want to end.
This is a recipe for those days when you need a comforting meal, one of those meals that, as my wife says, "makes your face tick."
Zacata is a type of pumpkin/auyama with a very good flavor and very tender, which with apples and yellow chili takes on a sour, sweet, spicy flavor that will fill your palate with every spoonful.
Take the time for the vegetables to roast, make the time count and let all the flavors develop. You will see that it will be worth it and when the cream reaches the table, no one will expect there to be a main dish, since this will be the protagonist.
Ingredients
- 1 whole Zacata
- 2 apples
- 1 Egg onion
- 2 cloves of garlic
- Yellow pepper
- Salt and pepper
- Basil leaves
- Milk cream
Instructions
Cut the pumpkin into halves and remove the seeds with a spoon, peel it and cut it into cubes.
Peel the apples, remove the seeds and cut into large cubes.
In a baking tin, put the pumpkin, apples, 1 onion cut into large pieces and 2 cloves of garlic. Add olive oil and season with salt, pepper and Ají Amarillo Chili INC. Put the tin in the oven at 220ºC for about 30 minutes, stirring occasionally.
Remove the garlic and gut it to obtain pulp. In a pot, add the roasted vegetables with a little broth, add the roasted garlic pulp and boil for about 5 minutes until the pumpkin is completely tender. Remove from heat and blend until creamy consistency is obtained. Add milk cream and blend again until you obtain a consistent mixture. Take the mixture to a clean pot and heat it. Adjust flavours.
For the Served
Serve it with fresh basil leaves, heavy cream and a little Naga Jolokia to make it more interesting!
