English muffin with bacon and Puttanesca sauce gratin

At Chili INC we love Italian cuisine, pastas with delicious sauces that make any meal a memorable moment. 

We were looking for something to cook on a cold Sunday and came up with this delicious recipe, which immediately became our brunch favorite.

We wanted something spicy, full of flavor and to raise our temperature so we could get out of bed. In the pantry we found some muffins that we had bought a couple of days ago and we decided to put sauce and cheese on them to make some delicious sandwiches. 

In this case we use the puttanesca sauce, as it is one of our favorites because of the complex flavor of anchovies, tomatoes, capers and olives to which we gave the spicy touch of Chili INC with Rocoto and then bacon and lots of cheese.

If you prefer, you can use another sauce of your choice, such as Neapolitan or Arrabiata. 

Here's how to make the Chili INC-style puttanesca sauce and how we made the delicious montaditos in the photo.

For the Puttanesca sauce

Ingredients

  • 1/2 onion finely chopped
  • 1/2 paprika
  • 2 cloves of garlic
  • 1 - 2 anchovies
  • Rocoto Chili INC to taste
  • 1/2 cup of green olives (or mixed if you prefer)
  • 1 tablespoon capers
  • 8 tomatoes, peeled and diced
  • 2 tablespoons finely chopped parsley
  • 2 tablespoons finely chopped basil
  • Salt and pepper to taste

Instructions

Heat a medium frying pan with the olive oil, add the onion and paprika, cook for 5 minutes. Add the garlic and cook for another minute, stirring occasionally. Put the anchovies,  Rocoto Chili INC and the olives, line the anchovies in the sauce and let them incorporate well into the mixture, add the capers, tomatoes, pepper, parsley and basil and stir very well. Cook covered for about 30 minutes, allowing the tomatoes to fall apart and the flavors to develop. The idea is that the texture remains rustic, however if necessary you can liquefy it a little to obtain the desired texture.

For the assembly

In a frying pan, brown some bacon until they are toasted, cut the muffin in half, put a couple of toasted bacon on top of the bread, pour about 2 tablespoons of sauce on top, put Parmesan cheese and mozzarella on top and take to the oven to gratin.
