My aunt and her family lived in Mexico for a while because her husband was doing a specialization. During that time he learned to make all kinds of preparations and whenever we went to his house he would cook us all these delicacies.
Since I was very little I fell in love with Mexican cuisine, it is acidic, spicy and full of flavors.
One of the dishes that he always made for us and that I personally loved was chilaquiles in green sauce for breakfast. Which sometimes we added fried eggs and a lot of jalapeno. Today I share with you this delicious breakfast so you can start the day full of spice and happiness.
Ingredients
- Caraota beans (they are the small black ones, they come in a jar or you can make them the day before)
- Totopos or nachos
- Guacamole
- Egg
- Fresh cheese
Green Sauce Ingredients
- 12 green tomatillos
- 2 cloves of garlic
- 1 white onion
- 1 lemon
- 4 tablespoons vegetable oil
- Habanero Chili INC
- Salt and pepper
Instructions for Salsa Verde
Place the tomatillos, garlic and onion, chopped into 4, in a baking dish in the oven at 180C for 30 minutes or when the ingredients turn brown.
Later they are blended with the lemon, oil, habanero, salt and pepper, the flavors are adjusted to taste.
For the assembly
In a bowl, put the tortilla chips, then pour the green sauce, the beans, the cheese, add a touch of Chili INC habanero, then the fried egg, season with salt and pepper and finally the guacamole... ready to share and enjoy.
