Roast Beef with Yellow Chili Pomade Butter

Do you want to make a roast beef recipe and the result is a juicy, well-seasoned and spicy cut? this is the perfect recipe.

In our house, as you well know, we love spicy food. All dishes have Chili INC and we love trying all kinds of recipes and experiences.

This time we had a cut of beef tenderloin and we wanted to give it our own touch with a pomade butter with lemon, spices and Ají Amarillo Chili INC . The result was simply spectacular.

Pomade butter is basically adding flavors to cold butter, adding the spices you like the most and a little salt and stretching it with a fork, to obtain a creamy texture that allows you to distribute the flavors very well. I recommend that you make the butter for at least 15 minutes so that it absorbs the flavors and releases all its power when cooking.

We roasted the meat in two stages, first we sealed it and then we finished it in the oven at a medium temperature to give it the point, I recommend that it be medium-rare, so that the sirloin is not too dry.


for the butter

  • 3 tablespoons of butter
  • 1/2 teaspoon black pepper
  • 1/2 lemon
  • Lemon zest
  • 1/4 teaspoon ground rosemary
  • Ají Amarillo Chili INC

for the meat

  • 1 cm thick beef sirloin steaks
  • Salt and pepper
  • 1 clove garlic
  • fresh thyme


Take the butter and with a fork add the pepper, the zest of 1 lemon, the lemon juice, the rosemary and the Aji Amarillo Chili INC until it has a creamy texture and all the ingredients are mixed homogeneously. Let it rest in the refrigerator for about 15 minutes.

Season the meat with salt and pepper and seal it in the pan with a little oil on both sides. Lower the heat and add the butter, the garlic clove and a sprig of thyme and make sure the meat is bathed in these delicious flavors for 1 or two minutes.
